I LOVE chili this time of year! Have you every made it with cornbread baked on top? So good! Sometimes I add quinoa to give it that ground beef texture for my man who likes beef - he likes the quinoa version just as much! Thanks for sharing this recipe!

Right! Basically just make up the cornbread (a basic cornbread recipe) and spread a layer on top of the chili and bake - I do it in a deep pie dish usually. You don't want to make it too thick so it bakes quickly and you don't bake that chili too much! Yep - I need to make it this weekend now that I am talking about it - haha!

Looking forward to making this recipe!

Do you recommend using a Hatch green chile or poblano?

Six Seasons is so great. If you eat mussels, the mussels with fennel and Israeli couscous is fantastic. Also the mushrooms and kale lasagna (double the bechamel). Really you can’t go wrong with anything.
