CATCH UP!
We just got back from Florida this week, and I’m sad vacation is over, but I’m excited to hunker down and focus on home life.
We went to Grant’s cousin wedding in Palm City, and we ended up staying in Stuart with both Grant’s family and my parents, who came to help with Sagan! Stuart was such a cute little town, and although we didn’t have a time of time to explore due to wedding festivities, we walked around and enjoyed the waterfront.
Afterwards, we went down to Miami for a few days with my parents, and although the weather wasn’t great, and it was a quick trip, I enjoyed my time there and would love to go back! Because many of you asked for recommendations, these are the places we enjoyed the most!
Mandolin Aegean Bistro: got so many recs for this place, and I see why! Cute outdoor dining an old 1940’s home. Good Mediterranean food with a lovely vibe!
El Bagel: absolutely must try the King Guava — guava marmalade, cream cheese, egg, and potatoes. A sweet and savory dream.
Zak The Baker: Get the frittata sandwich!
Sanguich: Would have loved to eat even more Cuban food on this trip, but we got a Cubano here in Little Havana, and it was delicious. Try a milkshake too!
KYU Miami: didn’t get a chance to dine in here, but we did takeout, and I LOVED it. They call themselves “wood-fired, Asian-inspired,” and everything I ate was perfect. The sweet potato was out of this world, same with the cauliflower!
Cev.Iche 105: Massive Peruvian menu with so many delicious ceviches and other fish options.
BIGFACE: fancy coffee and my favorite matcha of the trip
THINGS I’M LOVING
I am not one to typically make Pasta Alfredo, but the Sauz Salted Pistachio Alfredo is truly something else. It has that Alfredo energy without being too heavy or one note — the pistachio addition is such a nice touch. Pour this over some pasta with some oven-baked chicken breasts, and you’ve got a super easy, elevated Chicken Alfredo. Bonus points if you want to go high protein with something like Brami!
As you can probably tell by now, I love shopping at Gap (The Gap? Is that still a thing? I always wonder.) I bought this 100% cotton v-neck sweater because I’ve been loving layering with v-necks, and it was so affordable — only $30! I sent it to my sister too because there’s a gorgeous lavender color I knew she would love. It’s very thick and substantial, but great for layering since it’s cotton and breathable. I went with a large to make it extra oversized — it’s pretty large, so stick with your usual size if you’re not going for a super baggy look.
Tell Me Lies is back! I’ll be honest, I only watched half an episode, but I’m excited to keep going. It has been really hard figuring out when to watch TV — Sagan is too alert when breastfeeding now, and it’s too quick, and when I’m not working, I’m spending time with him, and then I need to go to sleep as early as possible. Grant and I will sneak in little episodes here and there if Sagan goes to bed early enough, but I’m really hoping to keep watching this season ASAP.

RECIPE!
Brothy rice has been trending on social media which inspired me to make brothy noodles. Even though this is my regular newsletter and not my 30-minute meal series, this is a super quick dinner that’s made in 30 minutes or less! You just bake the salmon in a simple honey soy garlic sauce, and then you cook the noodles and vegetables in bone broth for extra protein and nourishment.
I used broccoli and carrots, but you can use whatever vegetable you see fit. Bok choy and mushrooms would also be delicious! You can use any ramen noodle you’d like, but I love the brown rice and millet noodles from Lotus Foods. As far as bone broth goes, my favorite brand is Kettle and Fire!
Salmon Bone Broth Noodles
Ingredients (serves 2)
1 lb salmon, cut into 2 filets
2 tsp soy sauce
1 tbsp honey
2 cloves garlic, crushed
4 cups bone broth of choice
2 oz ramen noodles (2 noodle cakes)
1 cup broccoli florets
1/2 cup shredded carrots
2 scallion stalks, sliced
Chili crisp, to top
Sesame seeds, to top
1. Preheat oven to 400 F. In a small bowl, mix together soy sauce, honey, and garlic. Line a baking sheet with parchment paper, and add the salmon filet. Brush the sauce mixture over the salmon, and bake for 12-14 minutes or until salmon is fully cooked through and easily flakes with a fork.
2. Meanwhile, in a medium pot, bring the bone broth to a boil. Add the noodles broccoli, and carrots, and cook until your noodles are done and the vegetables have softened, about 5 minutes.
3. When everything is done, add the noodles and vegetables to bowls, and top with salmon. Spoon the broth over the salmon and noodles, and top with scallions, chili crisp and sesame seeds.

Love the brothy noodle trend, the bone broth base adds so much depth compared to just plain water. The honey-soy-garlic salmon glaze sounds perfect for weeknight cooking, simple but flavorful. Also those Miami recs are solid, KYU's wood-fired vegetables are incredible, tried their cauliflower a while back and the char-to-texture ratio is just chef's kiss. The King Guava at El Bagel sounds unreal, sweet and savory breakfast combos don't get enugh love.
