CATCH UP!
I’ll be honest, I don’t have much brain space right now to write a cutesy little intro. I do have some interesting thoughts I jotted down in my notes app that I want to get to next week, but for now, I’m keeping this catch-up short.
I have some new subscribers here, so welcome! We’ll chit-chat a little more next week when I’m feeling up for it. <3 Happy to have you here!
THINGS I’M LOVING!
It’s almost summer which means Aperol spritzes, chilled wine, and fun cocktails/mocktails. If you’re looking for pretty glassware for your drinks, try out these Crate and Barrel glasses! They’re technically wine glasses, but I use them all the time for iced tea and other drink concoctions!
I posted this on Instagram, but I bought this workout jumpsuit, and I’ve been wearing it a ton — to yoga, ballet, dance, run errands, etc. It provides a bit more support than some of the more loungey jumpsuits, and it’s only $28!
As a psychology lover, I was definitely interested in interesting to this Armchair Expert episode on narcissism with Ramani Durvasula, but I didn’t realize I would enjoy it so much! I learned so much about people with narcissistic personalities through this episode, and I think it’s a relatable episode for almost everyone. Dr. Durvasula is an engaging and easy-to-understand speaker, and I really enjoyed listening along on my morning walk.

RECIPE!
I went with a friend to eat dinner at Bacetti last week, and we got a cherry and peach panzanella that had me reeling with excitement. I don’t typically eat a lot of cherries, but these cherries were so fresh and flavorful, I knew I had to make a trip to the farmer’s market and recreate this salad.
Panzanella is an Italian summer salad usually made with stale bread, tomatoes, and onions, but this one is a stonefruit version made with burrata and a balsamic glaze. I didn’t actually use stale bread in my recipe — I just baked up some bread in olive oil to get that nice, crispy crunch.
Peach & Cherry Panzanella
Ingredients (serves 2-4)
3 slices sourdough bread, cut into 1” cubes (about 2 cups)
3 yellow peaches, cut into chunks
1 cup halved cherries, pits removed
4 oz burrata
Olive oil
Balsamic glaze (or balsamic vinegar).
Basil leaves
Salt & pepper
1. Preheat oven to 375 F. Add your bread to a parchment-lined baking sheet, and toss in about 1 tbsp olive oil with a pinch of salt. Bake for 10 minutes or until golden and crispy on the outside.
2. Add the baked bread, peaches, and cherries to a bowl, and toss together.
3. Transfer to a plate and top with burrata, pulled apart into pieces. Finish off with a generous drizzle of olive oil and balsamic glaze. Top with fresh basil leaves and salt and pepper, and serve immediately.
IN CASE YOU MISSED IT!
Last week was episode #17 of my 30-minute budget meal series! This is a fancy-feeling dish that uses packaged ramen — the seasoning gets mixed into the sauce for extra flavor!
