The past few weeks have felt very neutral — I haven’t written any spicy thoughts in my notes, nothing particularly wild or notable has happened, and I’m sort of just chilling, which I really should just appreciate given the past year has been rough emotionally. I’ve been reallllly leaning into summer — beaching every weekend, shopping at the farmer’s market, reading outside on our back patio — but I’ve also been trying to stay extra focused with work, keeping the house organized, etc.
I’ve been experiencing my yearly itch to travel abroad, and it keeps growing — I’m not sure how long I can ignore it, although as I’ve mentioned before, it has been really hard to plan big trips when I’m trying to stick around as we go through fertility treatments. I am more than ready for this long and arduous journey to be over. It’s sad, but I actually find it really difficult to ever imagine being pregnant at this point. Not that I don’t think it’s going to happen (because I do think it will, someday), but I just can’t visualize it anymore. I feel like part of my identity now is being a not-pregnant person. Sigh.
Okay, that sounds depressing. I swear I’m okay right now. I will always tell you when I’m not doing well! That’s kinda all I’ve got right now! Hopefully there’s more to report next week. I have therapy coming up, so maybe that will trigger some deep thoughts ;)
THINGS I’M LOVING!
I went to a Goop x Ruggable event this week and got the chance to try out some Goop beauty products. It’s easy to dunk on Goop, but ugh, I hate to say it, this bronzing gel is SO GOOD. You can use it for an all over glow or just dab it in the places you like — it’s really bendable and natural.

Is it a dessert? Is it breakfast? Is it a snack? We don’t know! It’s all of the above :)
I was originally craving a bowl of ice cream with peaches drizzled in olive oil, but I only had cottage cheese, so I thought, why not that make that the base instead? Still creamy, extra protein, just wonderful. Decided to take this recipe a step further by roasting the peaches, and instead of drizzling olive oil at the end as a finish, I roasted the peaches in a mixture of olive oil and maple syrup for an extra sweet flavor.
I had just seen a video from Sweaty Sweet Potato making roasted peaches, so I used her recipe as inspo, and this dessert/snack/breakfast was born.
Maple & Olive Oil Roasted Peaches with Cottage Cheese
Ingredients (serves 2)
2 yellow peaches
1 1/2 tbsp olive oil
1 1/2 tbsp maple syrup
1/4 tsp cinnamon
3/4 cup cottage cheese
1 tbsp roughly chopped walnuts
1. Preheat oven to 400 F and line a small baking dish with parchment paper. Cut your peaches in half and remove the pit. Add the peaches to the baking dish face up.
2. Whisk together olive oil, maple syrup, and cinnamon until smooth. Brush the mixture over the top of the peaches, then flip them to face down, and brush the tops. Drizzle the rest of the liquid over the peaches, and transfer to the oven. Bake for 10 minutes, flip the peaches so they’re face up, and bake for another 15-20 minutes until peaches have reached desired softness.
3. Transfer peaches to a plate or bowl, and then top with cottage cheese. Add the walnuts, and then spoon on the remaining liquid from the baking dish. Serve warm!
