CATCH UP!
Ok!! Some big announcements this week. THE PAID TIER OF MY NEWSLETTER IS BACK!
From here on out, the regular edition of my newsletter will go out on Wednesdays and the paid posts will go out on Fridays! I’m so excited!!!!
The free newsletter will remain the same (so do not fear) but in addition to the free newsletter, I’ll be sending out a few exclusive paid posts (that include recipes) per month!
At the start of the month, there will be a “Check-In” post that will include all the produce in season that month, how to use them, ingredient spotlights, and a call for special requests and discussions on what you want to see that month. This is where becoming a paid member has its perks: you can ask for specific recipes, types of posts, etc. In addition, I’ll be releasing two exclusive recipes per month that are JUST for paid members.
The paid membership will remain at $5/month or $50/year. If that interests you, yay! I would love it if you would support my work. If it doesn’t, no problem! Feel free to stick around for the free newsletter edition, and nothing will have to change :) And don’t forget, you can always try a week for free!
THINGS I’M LOVING!
We flew with Willow for the first time a couple weeks ago, and we were definitely nervous about the whole process! Thankfully, it went pretty smoothly! The first flight was a little harder, as we had a layover and the journey was longer, but on our return trip home, Willow slept peacefully in her carrier the entire time! We bought the Away Pet Carrier, and it was really great to travel with. It fits the airline's requirements for size and weight, and it has a lot of pockets to store treats, bully sticks, trash bags, etc. It also has a nice cozy, plush bottom, which Willow loved to sleep on.
I have decided that Salt & Vinegar Potato Chips are the best flavor of potato chips and they’ve been my go-to snack recently (with some cottage cheese, of course). I’ve been loving the Siete Sea Salt & Vinegar Chips because they have some serrano pepper in them, which gives them the slightest kick! Plus, they have great ingredients!
I do not own a Barefoot Dreams blanket, but I now have Barefoot Dreams Socks, and wowowow are they soft and cozy. I received these as a White Elephant gift this Christmas, and I feel like I really scored. If you like fuzzy socks… these are the queen of all queens of fuzzy socks.
RECIPE!
I love beans. And I love Caesar Salad. So why on earth have I never put them together before?! This ends now. Caesar Beans are the new it food!!
You can serve these on toast, or if you want to go the more classic Caesar route, serve them with some romaine lettuce and lemon juice! If you’re vegetarian and don’t want to include the anchovies, you can try miso paste as a replacement!
Instead of using raw egg yolk in my Caesar dressing, I like to use mayo. It still gives it that creamy, egginess (is that a word?!) without the nervousness around using raw eggs.
Caesar Beans
Ingredients (serves 2)
4 anchovy filets
4 medium cloves garlic, finely minced
2 tbsp Dijon mustard
1 1/2 tbsp mayo
Juice of 1 lemon
2 tbsp olive oil
Black pepper
1 (14 oz) can white beans, rinsed and drained
1/3 cup finely grated Parmesan cheese
Parsley, for garnish
1. In a large bowl, add the anchovies and minced garlic. Using two forks, mash the anchovies with the garlic to break them down. Add the mustard, mayo, and lemon juice, and a pinch of black pepper, and whisk together until smooth. Break up any remaining chunky anchovy pieces, if needed. Slowly whisk in the olive oil.
2. Mix in the beans and Parmesan, and then taste and season with more salt and pepper, if desired. Serve with toasted bread or over greens, and top with some fresh parsley, more Parmesan cheese, and black and red pepper, if desired.
