Hello and happy Friday! It has been quite the week, and I am emotionally drained if I’m being honest. My brain needs a break, and I’m looking forward to a chillll weekend.
However, I am also super excited to bring you episode 2 of my 30-min budget meal series! This week, we have Zucchini Lasagna Roll Ups that are made with ground turkey and cottage cheese. They’re low carb and high protein, nice and nutritious, made with minimal ingredients, and made in just about 30 minutes — maybe 5 minutes over, don’t kill me!
You basically slice zucchini into thin pieces, bake them, and then roll them up with cottage cheese. The zucchini is supposed to be the lasagna noodles, and the cottage cheese takes the place of ricotta. You can actually just use ricotta if you want, but I like the extra protein from the cottage cheese, and I think cottage cheese is just a smidge cheaper.
One note: I sprinkled some grated Parmesan on top before baking, but another option that I know will be delicious is shredded mozzarella, and I also think that can help keep the cost of the meal down!
