Hi, hi, hello, and happiest of Friday’s!
Grant and I are leaving for Mexico to this weekend to go vacation with family, and I absolutely cannot wait to be basking in the sunshine. It has been far too long since I’ve dipped in the ocean, and I am in some need of some sea salt therapy.
Speaking of therapy, I went to my second session ever yesterday, and I already love it so much. I left feeling almost high after a day of feeling really down. Why didn’t I start this sooner?
Except… I kind of know why. Finding a therapist was such a process. My insurance network has very little coverage, so finding someone that sounded like a good fit for me, was close by so I could do in-person, and that wouldn’t charge me an arm and a leg was quite the task. I did phone consults with 4 different therapists before I landed on the one I have now, but I think all my hard work has led me to the right person. At least so far.
I want to introduce a new series I’m doing on my newsletter: 30-minute budget meals!
I was on the phone with my sister, who probably makes more of my recipes than anyone else I know (thanks sis), and I was telling her how I needed some new ideas for recipes. She was telling me that she really likes to make quick meals that don’t cost a lot, and honestly, don’t we all need that?
After making recipes for 10+ years, you start to try to think out of the box and do what hasn’t been done before, but sometimes, people just want the basics. Good basics, but basics. And it’s tough times out there — food is so dang expensive.
