Christine Gallary’s Egg Roll Skillet inspired this week’s recipe. I loved the idea of buying pre-shredded cabbage/coleslaw mix to save time. My dish is more of a fried rice and doesn’t contain any pork because it’s vegetarian, but the one-skillet idea is the same!
If you have leftover rice, this recipe is just screaming your name! But even if you don’t, you can cook the rice at the start of the 30-minute window and prepare the rest of your ingredients while it’s cooking.
The rice is tossed with cooked cabbage, shredded carrots, onions, garlic, eggs, and soy sauce. It’s topped with green onions and spicy mayo—an easy combination of mayonnaise and sriracha!
Fried rice is a dish typical in many Asian cultures. This version draws much of its inspiration from Chinese fried rice but is definitely not traditional.!
If you have any leftover vegetables at home, feel free to throw them in as well!
