Greetings from New York City! This whole month has been a whirlwind, and it feels like this trip has been the pinnacle of that time! I’m so excited to be here!
Long before cottage cheese was trendy (and I’m not complaining that it is, because I think we should all relish in the glory that is cottage cheese), I would make savory cottage bowls usually filled with ingredients like tomatoes or cucumbers. I would treat the cottage cheese almost like a mozzarella or burrata, topping the bowl with balsamic vinegar, basil, and other savory fixings.
The other day, it occurred to me to use cottage cheese like yogurt in a tzatziki and turn that into a bowl. I’m honestly shocked I’ve never done this before. I love a classic tzatziki, but the idea of amping up the protein by using cottage cheese excited me.
This bowl contains crispy chickpeas for even MORE protein (plus we like a good crunch for contrast). I leaned into the Mediterranean vibe with some veggies and dill, and then the whole thing is finished off with a drizzle of olive oil and salt. So fresh, but filling at the same time — my favorite type of meal!
