Tahini Custard Oats with Caramelized Banana and Salty Chocolate

For most of my life, I was the type of person who went to bed dreaming about breakfast. But things got busy, and I started resorting to the same chia seed bowls and loaded cereals. This past month, I decided to put in the effort, branch out, and make breakfast exciting again. And you know what? Mornings have taken on a new life.
Infusing a little love and care into breakfast sets the tone of the day for me. All of these cheesy, TikTok sayings can get annoying, but making a good breakfast feels to me like the embodiment of “romanticizing your life.” And doing this doesn’t have to take a long time! Exhibit A: these tahini oats!
You might have seen custard oats circulating around the internet: the idea is you mix an egg into your oats to make them thicker and creamier. To ensure they don’t scramble, you cool down the oats first with a little cold water. It’s so easy, and the result is delicious. I like the texture MUCH more than regular oatmeal, and you get the added nutrients of the egg.
I’ve been very into caramelized bananas lately, and they added a lovely sweetness to the dish, which gets balanced out by the nutty tahini, dark chocolate, and flaky salt. I love the way the chocolate chips just melt slightly so you can get a dose in each bite. If you feel like splurging, I loveeee using date-sweetened chocolate chips — but any dark chocolate ones will do!
