I’m so glad it’s summer (for a million reasons that I talk about annoyingly often), but in terms of recipe developing, it has allowed me to work a lot with light and fresh corn recipes that really fit the season.
I will be the first to admit that I actually don’t LOVE corn, but it has been growing on me. And canned corn is my new secret weapon, especially for this budget meal series. It’s cheap and fast and versatile, and isn’t what this whole series is for?
These tacos are vegetarian, but they get a nice dose of protein from the beans, corn, and yogurt-based sauce. The cilantro crema sauce is a fresh addition, and it pairs well with the pico-de-gallo style mixture of beans and corn.
I wanted to keep the budget real tight on these, so I used the canned corn and beans, cole slaw mix, and just a few other fresh ingredients, but if you feel like splurging a little, you could add in some avocado!
Also, I used white beans, but you can use black or pinto or whatever else floats your boat!
