Okay, I lied. We are back to Friday emails. I wasn’t feeling the Saturday thing, so our original schedule sticks.
And I heard you loud and clear re: this 30-minute budget meal series. It is here to stay!
As much as I say this series is for you, it’s also for me! I’ve been finding it very helpful to make these recipes on busy work days. When I remember it’ll only take 30 minutes to whip something up, it keeps me from procrastinating lunch or ordering delivery. See, this series can help all of us save $$$.
This week’s recipe is a sheet-pan meal that turns into a delicious bowl! We’ve got roasted carrots and cauliflower that get baked with spiced turkey meatballs, and then everything is served over some minty, garlicky yogurt that you scoop into each bite.
Some notes:
I go into these recipes assuming you already have spices in your spice cabinet. If you’re missing some of these spices, feel free to use whatever spices you have at home! If there’s a premixed blend you already like, please, go for it! I develop my recipes with the idea that they can be modified.
Same goes for the vegetables. If you have different veggies at home and want to add them to your sheet pan or swap them in, again, be my guest! In fact, I encourage you to throw it all in there!
