Hi! I just made this. It was delish but I have a couple questions. What type of vinegar do you use for the marinated shallots? And do you put the vinegar in the salad or just pluck the shallots out? (I used white vinegar and plucked them out but not sure if that was right). Also, do you think you could skip heating up the olive oil if you made the dressing beforehand? 🤔 thanks!

hi so sorry for the delayed response! You can really use any vinegar here — I tend to go for red wine vinegar, but white or white wine is great or even apple cider! I plucked the shallots out, so that is correct! Although it wouldn't hurt to also include the vinegar too — more dressing!

you can't skip heating the olive oil because it's the heat that gets all the spices and herbs into the oil (like infusing it). However, if you're prepping ahead of time, just heat, and then let cool!
