This recipe is delicious!! I've eaten it when just made and cold from the refrigerator, it's great both ways. I made it the second time with 12 oz of pasta. There was still enough dressing and I found that I liked the pepper to pasta ratio better. That stretched it to 3 servings as well.
If i make this ahead of time, would you recommend i add the burrata before serving or will it still taste the same if mixed the day before? I was thinking of just warming the pasta and peppers slightly the day of and then adding the dressing and burrata before i serve. Thoughts??
Yes I would add the burrata in when you’re ready to serve vs mixing it in before! You also don’t even have to warm the pasta if you don’t want to — it can be served room temp or cold. I actually found the flavors were amazing the next day after it was chilled!!
