Where have all the breakfast potatoes gone?
I feel like potatoes are such a breakfast staple, yet I rarely see breakfast recipes for them anymore. If I’m missing out, please feel free to send them my way, but I am absolutely petitioning to bring them back, and I say that about my own life as well.
This dish sort of has an identity crisis — it’s got ingredients and flavors that would typically make up a chilled potato salad, but it’s actually meant to be eaten warm. Why? No reason, other than I feel like at breakfast I like to feel like I’m enveloped in a warm hug. If you want to chill it, be my guest, but I promise you, it’s not necessary. Plus, I feel like there’s something nice about eating something different than your run of the mill potato salad.
