One-Pan Honey Smoked Paprika Chicken with Pumpkin Pasta & Crispy Sage

Hi! I am back with a (delicious) vengeance! Took an unintentional week off last week since the whole fam was sick, but once I recovered, I ran straight to the kitchen with a fall idea that had been marinating in my mind.
This One-Pan Honey Smoked Paprika Chicken with Pumpkin Pasta and Crispy Sage was my return to the kitchen, and I was stoked with how it came out! I’ve been on a chicken kick recently, which feels out of character, but I think it feels soothing to me during this postpartum period. And of course, pasta is the ultimate soother.
I use skin-on chicken thighs when I make these one-pot recipes because I like when the fat renders and adds flavor to the dish. If you’re not into bone-in, skin-on chicken thighs because you find them annoying to eat (fair), you can go boneless skinless here, but you just might need to compensate with a little extra oil in the pan when you add the rest of the ingredients.
I used mini shell pasta here, but you can use any small pasta like orzo, ditalini, macaroni, etc.
And I guess this title is a litttle bit of a lie since you fry the sage in a separate pan, but forgive me! The rest is all cooked together, and the crispy sage on top is ALWAYS worth it.
