Miso Butter Tomato Rice with Lentils

Hi friends! A little delayed on the 30-minute meal this week thanks to some travel, but I’m back now and finally typing this up for you!
I haven’t been able to stop making miso butter rice ever since I learned about it, and this is a summery version with sautéed onions, burst cherry tomatoes, and lentils. It’s nourishing and cozy but also bright and refreshing at the same time, thanks to the tomatoes. ‘Tis the season!
Here are some tips to keep things efficient and save yourself maximum time:
Use pre-cooked lentils. You can find them in a can (I get mine at Whole Foods), but I know Trader Joe’s has them in the refrigerated section as well!
You can cook the rice in a pot, but I’ve found the fastest way is in a pressure cooker. I included instructions below, but I’ll do 15 minutes on high with a 10-minute natural release.
