I am soooo ready for the weekend. Every hour of this week has been mapped out to maximize productivity, and I’m pooped! Going to take tomorrow to relax — taking a prenatal yoga class and booking a prenatal massage. I need some REST.
And this is why we love 30-minute meals! I look forward to making these each week because I know I can feed myself quickly when I’m in the thick of it.
If you hate chopping, this recipe is for you! NO chopping is required unless you count cutting up an avocado, but I don’t. In this meal, we utilize shortcuts — ingredients that are (mostly) ready to go that get assembled.
I used frozen waffle fries as the base here, but I was actually looking for frozen diced potatoes. I couldn’t find them at the store right by my house, so I pivoted. But the fun thing about this recipe is that it’s adaptable — you can use any type of frozen potato! Waffle fries! Regular fries! Homestyle fries! Just make sure you can stick them in the oven, and that they don’t take more than 25 minutes to bake.
This recipe is high in protein thanks to the ground turkey, which is seasoned with taco seasoning. Everything gets topped off with salsa, cheese, sour cream/Greek yogurt, and avocado slices.
I also squeezed some lime over the final dish, and if you have a favorite hot sauce, I would recommend that as well!
