Lemon Alfredo Cabbage Pasta

Hello and I hope everyone is having a great start to their weekend! We went to a baby music class this morning, and I’m testing out some cookbook recipes. I’m also scheming some more ideas for new series, “Food Prep for Meal Snobs,” which in case you missed it, I launched last week. It’s for people who get bored eating the same thing everyday but still want the ease and convenience of meal prep. So, it’s one recipe that can be eaten multiple different ways throughout the week, and the goal is that they’re always healthy, easy, and tasty. Last week, we started with this Feta Frittata Bake.
Now for this series, we’ve reached an exciting milestone: I think I’m finally coming around to cabbage. I never disliked it, but I also never used to cook with it. But I’m excited because it’s not only versatile but healthy and filled with fiber!
This pasta is a play on pasta al limone — I debated whether or not to call it that instead of Alfredo, since it’s sort of neither-nor. Either way, it’s creamy, lemony, and extremely simple to make. The whole dish gets topped off with some spicy breadcrumbs for a little extra oomph, and you could even throw in some sausage or chopped up hot dogs for protein. You could also go the route of using a protein pasta to round out the meal without having to add on an ingredient.
