I had some chicken breasts sitting in my refrigerator, and all I could think about was making chicken cutlets, so here we are! Of course, I had to add a little spice to the dish — literally and figuratively — so I made a hot honey glaze that really took this dish to the next level.
I’ve seen many variations of chicken cutlets served with a slaw or a salad, and I made something essentially in the middle of the two. A sort of kale salad sort of slaw made with kale, celery, red and green onion, parsley, olive oil, and lemon. The bright freshness of the salad really pairs nicely with the spicy sweetness of the chicken.
This is a great dinner idea that takes less than 30 minutes!
