It’s another week, another Friday, another 30-minute budget meal! I’ve been having to rack my brain a wee bit harder lately to come up with unique ideas for this series, but every week I surprise myself for what I’m able to come up with.

I think right now as we shift out of the summer season and into fall, it feels like a weird in-between time. Personally, I’m still thriving off of tomatoes and salads and bright summery flavors, but I’m already seeing pumpkin recipes pop up on social media which is sending me into a spiral.

I don’t feel ready to fully jump into fall recipes, but I do feel like the summer fatigue happening, so I’m going to try to settle for food that fits in between.

These turkey meatballs with cucumber salad and coconut rice feel like that just that — the meatballs have that warm and cozy factor, but the coconut rice and refreshing cucumber salad keep them feeling like a warm-weather meal.

I used ground turkey in this recipe because it’s the most budget-friendly ground meat, but you can always use pork, beef, chicken, etc. The ingredient list may look a little long, but many of these ingredients are pantry staples (rice, honey, soy sauce, garlic, etc.), so hopefully you won’t have to buy much! And of the things you do have to purchase, they are still cost effective (shoutout to canned coconut milk for always pulling through).
