I spent all day Wednesday filming a “What I Ate in A Day,” and this recipe was my lunch! It was a very busy day, so I was stoked to have a super quick recipe on deck.
This orzo is filled with Greek-inspired ingredients — chickpeas, red onion, tomatoes, lemon, feta, and oregano. It’s like a little taste of vacation in a meal.
This recipe can easily be made plant-based by omitting the feta (which might save you a little $$ too).
