Scallops!!! Ginger! Garlic! Cucumbers! So much texture I could cry. I love a simple pairing of protein and vegetables, especially when it comes to seafood. This dish can be eaten on a hot day where you get cooled by the cucumbers or a cold day where you get soothed by the warm, gingery scallops.
