I love cooking myself an elaborate meal, but when I’m busy working, I just need nourishment. When the hanger strikes or when you’re knee-deep in meetings and emails, you want food that’s available NOW. And if you’re anything like me, you still want it to be healthy and delicious.
I’m very particular about what types of food I’ll prep ahead of time because I really don’t like a soggy, sad lunch. Thankfully, there are certain types of recipes that are better suited for make-ahead lunches.
