It has been 95 degrees all week, and I’ve been avoiding using my oven. A bowl of cold noodles sounded absolutely refreshing, so I decided this week’s 30-minute budget meal was going to be a rendition of cold sesame noodles, a Chinese-American classic. Eater did an article on the history of cold sesame noodles, which I thought was a fun read and gives some background on the dish.

My take on this recipe is definitely closer to a “peanut noodle,” which certainly strays a little from its original roots but is certainly tasty nonetheless. It’s spiced with a bit of chili oil and sweetened with a touch of brown sugar, and the cucumber and scallions on top add a bit of crunch and hydration.

This rendition isn’t authentic or traditional, but it gives nod to the Chinese and Chinese-American sesame noodle that we have all come to know and love.
