Hi hi hi! Welcome back to another week of 30-minute budget meals!
This recipe is by no means groundbreaking or revolutionary, but it has the potential to be a staple. Most of us have had a penne alla vodka dish, and you may have even seen a variation of beans alla vodka, but today, I present to you: chickpeas alla vodka! With kale, no less!
My favorite vodka sauce recipe is from Jon & Vinny’s, and I used theirs as an inspiration for this dish, with a few modifications. This meal is hearty, but you might be surprised at how little you need to make it! Since we are using tomato paste and chickpeas, which come in cans and tubes, we are keeping our costs down!
You can eat this dish as is, in a bowl, but my recommendation is to eat it with a nice big slice of toasted, crusty bread. Or, you can also serve it over some brown rice or quinoa, which could help you stretch this meal to serve 4 people. And rice is very budget-friendly!
I couldn’t help myself, and I had to throw in some kale here to make sure we are all eating our veggies. Spinach is a great substitute here as well!
Also! If you don’t have vodka at home, you can just skip it. NBD!
