What a week. I cannot begin to explain how sad and stressful it has been here in Los Angeles. While Grant, Willow, and I are safe and spared, there are so many others we know (and don’t know), who have watched their communities burn to the ground, who have lost everything. Just devastating.
As you can imagine, working this week was a challenge. I wasn’t in the mood to shoot cute little recipe videos. But after finding myself doom scrolling and giving myself a raging headache, I figured it was time to log off and focus on something else. This Chickpea Pizza Skillet is the one recipe I managed to make in the past few days, and it did bring me some respite from agonizing over the news.
This dish is basically a pizza in a bowl. There’s no crust, but instead chickpeas. You could always toast some bread on the side and dip it into the skillet, but I loved it as is. And I am proud to say, this recipe it is actually ready in closer to 20 minutes. Also, if you wanted to swap out chickpeas for white beans, you can do that as well! Last note: the oregano may look like it’s just garnish, but I find it really adds to that pizza flavor. Try not to skip it!
