Happy Friday! I’ve been thinking of moving my paid newsletters to Saturday mornings, but I wanted to let everyone know first! So consider this your warning! I feel like everyone is super checked out by Friday, and I don’t like to think of my emails getting lost in end-of-week apathy.
We’re on our 7th week of 30-minute budget meals, and I still feel like there are so many possibilities! This week I decided to work with chicken. I chose chicken thighs for this recipe for two reasons: 1. They’re cheaper than breasts 2. They’re juicier and more flavorful.
This is a one-skillet dish that involves cooking chicken thighs, rice, onions, and cauliflower in just one pan. It’s creamy from coconut milk and bright from lemon juice, and I threw in some golden raisins for just a touch of sweetness, which I think works well against the bitterness of the turmeric.
There’s just something so nourishing about chicken and rice, and I’m already thinking about when I’m going to make this one again.
