Baked Sweet Potato and Egg

Back in college when I started Kale Me Maybe, I used to make baked eggs for breakfast every single morning. I would sauté a bunch of vegetables, add them to a ramekin, sprinkle on a little goat cheese, and crack in egg inside. I’d let it back while I’d get ready for school or work (and work somehow always started at 10am… that doesn’t happen here in LA)…
