HAPPY FRIDAY! Does anyone feel like the weeks are flying?!
I keep waking up super early, and I’m not sure why, but I’ve been trying to make use of that time by getting some morning sunlight on our back patio, doing a quick meditation, and reading some non-fiction.
My birthday is tomorrow and one of my best friends is coming into town, so I’m excited to have a fun weekend. Grant and I just finished watching The Golden Bachelor and just started the new Love Is Blind, and I think I might really be coming around to reality TV these days. I saw a TikTok where someone called reality TV “anthropology” and I am going to go with that.
Now, back to our 30 minute budget series!
I’ve been seeing “baked tacos” all around the internet, but I hesitate to even call them baked tacos because they almost seem like quesadillas? Maybe they’re more of a hybrid? Anyway, these are definitely a FAST meal to prepare, and they’re also super customizable if you want to spruce them up with toppings like homemade guac.
But because this is a budget series, I kept it as basic as I could without compromising flavor. Unlike most of the recipes I’ve been seeing online, I kept these vegetarian, but you could always add in some ground beef or cooked chicken. I also recommend serving these with your favorite hot sauce!
