RECIPE!
This week’s recipe is a springtime, pan-fried gnocchi bowl with roasted asparagus, lemon, Parmesan, and a fried egg! I always forget how quickly asparagus roasts in the oven, and it just feels like the epitome of springtime to eat it with some lemon.
I like to pan fry gnocchi to get it crispy and golden, which sometimes I prefer to the traditional soft texture, especially paired with the asparagus and some runny egg yolk. I ended up using 1 egg per bowl here, but you could definitely go for 2 to amp up your protein. Plus, I love when a runny yolk gets paired with lemon juice — it almost tastes like a sauce. Again, I used 1 lemon here, but if you like your meals extra lemony, you can increase to 1 1/2 or 2 (which is noted in the recipe below).
